We felt pork would be able to handle the sweetness of the Peeps and we added some coffee so there would be some bitterness to contrast with the sweet. What you need: 1 pork tenderloin (about 1 1/2 - 2 pounds) 5 Peeps (chopped up) 1 teaspoon coffee grounds 1/2 Tablespoon olive oil 1/2 teaspoon crushed red pepper 1/2 teaspoon celery salt 1 teaspoon basil 1/2 cup bread crumbs In a food processor, add the ingredients and blend together adding the oil as you blend. Once the ingredients are thoroughly blended and the consistency is like a very thick sauce (it will be "marshmallowy") scoop the mixture out and rub it onto the tenderloin, spreading it evenly. Wrap the tenderloin in foil and place on a hot grill. The sauce/rub will melt and coat the pork. After about 10-15 minutes remove the tenderloin from the foil and finish cooking on both sides. Keep the sauce that is contained in the foil to drizzle over the pork. Let rest 5-10 minutes before slicing. Serve with your favorite sides.
