While the craft cocktail may be the mainstay for a quiet firelit evening at a jazz club, there comes a time in every establishment's life when patron volumes and desires trump the ability to slowly put together housemade infusions, bitters and tinctures in favor of something that can be put together quickly, efficiently, and above all else, uh, tastily.
Enter the theme cocktail list. Whether at a fast paced rock 'n' roll sushi restaurant or, like Cowboys and Rednecks ("C&R Pub"), a country western joint, theme cocktails give catchy names and descriptions to cocktails that are easy to assemble for the inundated bartenders while keeping patrons' mouths happy. Appropriately enough, C&R Pub has revamped their previously themeless cocktail menu with an updated "Dukes of Hazzard" theme, starring the likes of Bo, Luke, Boss Hogg, and of course — Daisy Duke.
And while sipping slowly on an icy-cool Luke Duke sounds ... appealing, the Daisy Duke is a refreshing cocktail worthy of the namesake. Cool Peach Van Gogh vodka (peach with a hint of mint flavor) blended with Mr. Boston peach schnapps, fresh lemon juice and Freixenet Brut champagne, it's lip smackingly tasty.
Light, fruity, a good bit of tart from the lemon juice and a good bite from the champagne — for a cocktail that's easy to assemble on the quick it makes a refreshing addition to your happy hour or even a nice change of pace from the Mimosa at brunch.
The Daisy Duke, which was featured on C&R's first cocktail list, was "Far and away the most popular," according to general manager Beth Roche, "so we had to add her to the new list." I'd say truthfully that Daisy Duke defines the list rather than simply being added to it, who doesn't love Daisy Duke? Though I guess it's sort of sad but more than likely a good thing that there's not a Cooter or an Enos themed cocktail. Maybe someday.
How to make the Daisy Duke
1 1/2 oz. Van Gogh Cool Peach Vodka
1/2 oz. Mr. Boston Peach Schnapps
1/2 lemon's worth of juice
Freixenet Brut to finish, 4 oz. or more
Combine all ingredients in shaker with ice, shake, pour into chilled milk jug.
