HEART AND SOUL By Scott Strazzante An intimate look at high school athletics away from the fields of play We cant fit them in our home, so this is the next best thing, said Lyons Township High School mom Peggy Wilkins (second from left) while dishing out pasta to hundreds of hungry student athletes, including her son Patrick, at the schools Western Springs campus. During the fall, Wilkins and other football players parents prepare and serve a training table dinner the Thursday before almost every game. At this meal alone, the boys consumed 100 pounds of spaghetti, 50 pounds of macaroni and cheese, dozens of chickens, mounds of salad and countless homemade desserts. The idea of varsity coach John Derning, the gathering is a wonderful bonding experience as the players, freshman to seniors, receive weekly awards as they dine together grouped by position.
