<b>What they came up with:</b> "I started to go crazy with this," chef Mindy Segal said, presenting us with a plate of cookies, each assigned a different color Peep. "I mean, I put hair on them." The unifying idea is that each Peep is peeping from a cookie — the green from an Oreo and mint; the purple from a brown butter citrus custard cookie sandwich; the yellow from a fleur de sel cookie packed with caramel butter cream; a hazelnut butter paired with the blue; chocolate raspberry with the pink; and chocolate mousse with the chocolate Peep. "I am a cookie monster," Segal said. "I love them, so it was obvious. To me, a sandwich cookie is dessert."<br>

<b>What we thought:</b> Best in show. Not radically different from the cookies Segal already serves, but a bite of Peep with each lends a pillowy taste to a dessert already awash in flavors. Plus, they're super fun.
