In Word & Deed cocktail: Billy Sunday is the newest high-end cocktail bar to grace Logan Square, opening in February to high praise for head mixologist Alex Bachman and chef Matthias Merges, who also owns Yusho.
The libations menu takes classic drinks like the negroni and the daiquiri and fashions them anew, with eccentric tonics and bitters expertly made in-house. The In Word & Deed cocktail ($10) is a fine example: a well-rounded melange of White Dog whiskey, egg white, quince, ransom vermouth and finger lime tincture.
Rich protein from the egg provides a hearty complement for the tart lime and tingly vermouth, punctuated by a smooth stroke of whiskey that goes down easy but still packs a wallop of flavor and bite.
Brimming with floral notes and culminating in subtle hints of sweetness, this tasty beverage lingers on the tongue like an epiphany begging to be spoken out loud. 3143 W. Logan, 773-661-2485, billy-sunday.com
