4 chicken thighs
1 small onion, peeled and quartered
1/2 small carrot, peeled
1 small bay leaf
4 black peppercorns
4 cups chicken broth
1 tablespoon olive oil
1 cup diced onion (1/4-inch dice)
1 cup diced carrot (1/4-inch dice)
1/2 cup thinly sliced Spanish chorizo
1/3 cup butter
1 1/3 cup plus 2 tablespoons flour, divided
Salt
1/4 teaspoon saffron, soaked in 1 teaspoon warm water
6 tablespoons coarse cornmeal
