Here are the notable restaurants in the new Palazzo Resort Hotel Casino (3325 Las Vegas Blvd. S., Las Vegas), plus one worthy maverick off the Strip:

Carnevino, (702) 789-4141; www.carnevino.com. Open 5:30 to 11 p.m. nightly; bar opens at 5 p.m. Lunch to start soon. Entrees, $28 to $75.

 
Cut, (702) 789-4141 and (702) 607-6300; www.palazzolasvegas.com/cut.aspx. Open 5:30 to 10 p.m. Sunday through Thursday and 5:30 to 11 p.m. Friday and Saturday. Bar and lounge open till 1 a.m. Entrees, $31 to $85.

Restaurant Charlie, (702) 607-6336; www.palazzolasvegas.com/dining.aspx#Rcharlie. Open 5 to 10 p.m. Sunday through Thursday; 5 to 11 p.m. Friday and Saturday. Entrees, $38 to $75. Prix fixe sushi menus at Bar Charlie, eight courses $175 and 14 courses $250 per person (plus wine, tax and tip). Kitchen loft table, 10-course tasting menu beginning at $350 per person (plus wine, tax and tip).
