Chef Holger Struett of Chops Lobster Bar, 101 Plaza Real S, Boca Raton, 561-395-2675 called to say he's just gotten that European delicacy: white asparagus. He says that in Germany it's only available from April to June, and during that time it's just about all anybody eats.
Of course the asparagus are grown so they are not exposed to light and do not develop green chlorophyll.
Struett got in 55 pounds that he'll begin serving today poached with new potatoes and Hollandaise sauce. You get a pound of them for $26. But when he's sold them out, they are gone.
