First look at Hyde Kitchen + Cocktails, opening Sunday

Hyde Kitchen + Cocktails, the newest iteration of SBE’s lounge Hyde, will open Sunday on Sunset Boulevard. The once uber-intimate 100-guest-max lounge is moving down the street and taking over the space formerly occupied by XIV.

“Top Chef” alum Chris Crary (41 Ocean, Whist at the Viceroy) will helm the kitchen with a limited menu of small plates meant to be shared. Some of the dishes include arancini with peas, Manchego cheese, apple, mint and lime; and oysters with caviar, pickled cucumber and parsley panko.

There’s also mussel sambuca with chorizo, tomato, green onion and brioche; a kale salad with pickled cabbage, avocado, Gorgonzola and pecans; and braised beef cheek served with celery root puree, shallot and cilantro. Prices range from $9 to $24.

There will also be a few unannounced “secret” menu items, including a whole, 4-pound lobster, a 40-ounce bone-in rib-eye steak and Petrossian caviar, all at market price. Cocktails will feature fresh juices and start at $12.

Ryan Magarian, the man behind the original Hyde cocktail program, has created a list of hand-made libations featuring fresh juices that start at $12.

The new venue is capable of seating 300 people with a full, open lounge, tripling the capacity of Hyde’s former, notoriously small digs.

Hyde Kitchen + Cocktails will be open daily from 6 p.m.
