A classic Italian bread salad, panzanella is a great way to use up any extra bread you have lying around. Simply toss the cubed bread with whatever salad fixings you like — tomatoes, onions, olives, capers, cheese — and plenty of dressing to soak into the cubes. It makes a perfect side or light meal.
