I miss the berry bars at House of Bread in San Luis; they were my favorite breakfast after a run or before class, and they were even my last meal before commencing the 18-hour drive from SLO to Denver! Homemade doughnuts? Yes! And not just any doughnuts, but French crullers. They're made with pâte à choux, the same dough used to make cream puffs and éclairs. So they're crisp on the outside and light and airy on the inside — both delicate and structured, as L.A. Times Test Kitchen manager Noelle Carter puts it. "After a lot of trial and error (and several dozen eggs)," she came up with a winning recipe. She took a couple of cues from Rose Levy Beranbaum's "The Pie and Pastry Bible," adding additional egg whites and using water instead of milk to increase the crispness. Best of all, the dough is mixed in a food processor, which is much, much easier than mixing in the eggs by hand. These fry up nicely, puffed and golden and perfect for weekend mornings.
