Pulled Turkey Leg Sandwich. Chipotle BBQ Sauce. Cole Slaw

  • 2 each Turkey Legs (left overs) – Pulled
  • 1 cup CM Chipotle BBQ Sauce
  • 2 Cups CM Coleslaw
  • 4 each CM Brioche Buns

In a bowl, combine the pulled turkey legs and CM chipotle BBQ sauce and mix. Split the CM brioche bun in half, and toast. To build sandwich, mound the bottom half of the brioche bun with the BBQ turkey, and top with the CM coleslaw. Place the top of the brioche bun on the CM coleslaw to complete the sandwich.

Mixed Greens, Apple Toasted Walnuts and Blue Cheese with a Cranberry Vinaigrette

  • 4 cups Mixed Greens – Washed
  • 2 cups Apples – Julienne
  • 1 cup Walnuts – Toasted
  • 1 cup Blue Cheese – Crumbled
  • 1 cup Cranberry Vinaigrette (recipe below)

Cranberry Vinaigrette

  • ¼ cup Cranberry Sauce (left over)
  • 1/3 cup Red Wine Vinegar
  • 2 Tablespoons Honey
  • 1 cup Canola Oil
  • Salt

In a high speed blender, add the left over cranberry sauce, red wine vinegar, and honey. Blend on high until ingredients are well mixed. While blender is still on, slowly drizzle in the canola oil until emulsified. Season with salt.
