Recipe: Salad Encino

1 clove garlic

1/2 cucumber, peeled

1/2 onion

1/2 green bell pepper

3 sweet gherkins

1 tomato

2 1/2 tablespoons olive oil

Salt, pepper to taste

2 1/2 tablespoons vinegar

1/2 red bell pepper, sliced, optional

1. Rub a wooden salad bowl with the garlic. Slice and quarter the cucumber; dice the onion, green bell pepper, gherkins and tomato and mix thoroughly.

2. Mix the oil, salt, pepper and vinegar and combine with the vegetables using a wooden spoon. Garnish with the red bell pepper slices.
