Then:Acadia Now:The Bedford/Carriage House Michael Simon Acadia --> The Bedford and Carriage House Following a nine-month stint at South Loop restaurant Acadia, Simon announced in late June that he was headed to The Bedford in Wicker Park. His role as beverage director includes a revamp of The Bedford's drink program (and occasionally taking a post behind the bar, starting Monday) as well as creating the cocktail menu for a Lowcountry-inspired restaurant from the same owners, Carriage House, due to open in September down the street from The Bedford. "I'm in love with the Carriage House concept; it's something completely new to Chicago," he said. "Here, I'll evolve my culinary focus of classic drinks. For The Bedford, I'm going to expound on the 1940s supper club idea and build it [to] maximum efficiency."
