Then:Balena and The Bristol Now:Southern Wine & Spirits Peek made the move from the restaurant world to the corporate world when she left Lincoln Park restaurant Balena in early June to work as mixologist for beverage distributor Southern Wine & Spirits. In addition to teaching a bartending and spirits course for the company in Chicago, Peek also consults on drink menus around the city. Her cocktails will stay on Balena's menu and she's also revamping the drink menu at Carnivale. "[The move from bartender to teacher] is just night and day," Peek said. "I still have to get used to getting up at six in the morning ... being a day-walker instead of a night-walker."
