Since becoming head bartender at 312 Chicago, Dan, 26, has begun experimenting with barrel-aged cocktails to round out the menu of classics at this Loop bar and restaurant. Dan, who lives in Andersonville, is a descendant of Johnny Appleseed, who famously brought apples -- and hard cider -- to parts of the Midwest.
Catch him: Tuesday and Wednesday afternoons and Thursday through Saturday evenings at 312 Chicago (136 N. LaSalle St.)
Signature drink: A nod to Dan's ancestor, The Chapman ($12) -- Johnny Appleseed's real last name -- combines apple brandy, lemon juice, honeycrisp apple-clove syrup and plum bitters.
