North Broadway in Lakeview will soon have another new addition. Greg Shuff of Last Bay Beer is planning a craft brewery concept that will go into a former retail space just a block north of Frog n Snail,
Scheduled to open early this winter, Dryhop (3155 N. Broadway) will feature craft beers brewed in-house and a menu of shared plates to pair with them (not the other way around). Two flagship beers – their Wheat IPA and Chicago Common – will be supplemented by a rotating selection of seasonal batches such as a creamy coconut stout, a saison aged with chamomile and orange peel, and a summer ale with notes of lavender and lemon balm.
Brant Dubovick of Church Brew Works in Pittsburgh is on board as head brewmaster, and Pete Repak (Charlie Trotter's, Fox & Obel) will serve as executive chef. Shuff said the menu will be driven by "what we can get from local farmers at the time." Highlights include prosciutto peppers stuffed with Iberico cheese; a pastry-wrapped boudin blanc sausage served with rosemary-garlic mustard; and three types of mussels: white Belgian and shallots, sweet chili-garlic and coconut milk, and chorizo and vermouth.
Shuff said the space will be "a mix of contemporary and rustic," with concrete floors, rough-cut wood, and other natural materials. The brewing process will be front and center; beer will be poured straight from stainless-steel serving tanks behind the bar, and the brew house will be adjacent to the dining room.
Shuff, who lives a block and a half from the space, said Dryhop will be "a neighborhood place" at its core. While North Broadway has been ruled by fast-casual spots in recent years, new businesses such as The Laugh Factory, Wilde Bar & Restaurant, and Pastoral are reinvigorating the area.
