Recipe: Bananas Foster with Siesta Key Spiced Rum

Bananas Foster is a classic New Orleans dessert recipe, which was created by chef Paul Blange at Brennan's Restaurant. Riffs on Bananas Foster are commonly found in things such as bread puddings, oatmeal and even coffee. This recipe is very forgiving, lending itself to personal tastes. My kids prefer it with 1/2 cup of sugar rather than 1/3 cup. My sister omits the cinnamon. If you don't have any crème de banana on hand, it will still taste great. Do not make this ahead, however, as chilling causes the bananas to brown.

4 tablespoons butter
1/3 cup dark brown sugar
1 teaspoon vanilla
1/4 teaspoon cinnamon
1/4 cup Siesta Key Spiced Rum
2 tablespoons crème de banana
2 bananas
4 scoops vanilla ice cream

Melt butter in a large saute pan on high heat. Add brown sugar and stir well. Add vanilla, cinnamon, rum and crème de banana. Stir well. Slice bananas into half-inch circles into the mixture. Saute for 2 minutes. Divide banana and sauce mixture onto four serving dishes. Top each with a scoop of vanilla ice cream.

Serves 4.
