Recipe: Bananas Foster with Siesta Key Spiced Rum

( Michael Laughlin / May 2, 2012 ) Bananas Foster is a classic New Orleans dessert recipe, which was created by chef Paul Blange at Brennan's Restaurant. Riffs on Bananas Foster are commonly found in things such as bread puddings, oatmeal and even coffee. This recipe is very forgiving, lending itself to personal tastes. My kids prefer it with 1/2 cup of sugar rather than 1/3 cup. My sister omits the cinnamon. If you don't have any crème de banana on hand, it will still taste great. Do not make this ahead, however, as chilling causes the bananas to brown.
