APPETIZER Chicken Liver Pate An easy and delicious rich pate thanks to the Cuisinart Food Processor. • 2 pounds raw chicken livers, trimmed • 2 medium onions, cut into quarters • 1 teaspoon paprika • 1 teaspoon curry powder (optional but good) • Salt and fresh-ground black pepper, to taste • 1 cup butter, at room temperature, cut into tablespoon-size pieces • 1/4 cup Cognac In a saucepan, combine the livers, onions, paprika, curry powder, if using, salt and pepper. Bring to a simmer over medium heat. Reduce the heat to low, cover, and cook at a slow simmer about 10 minutes. Let cool 15 to 20 minutes. In a food processor fitted with the metal blade, process the mixture until pureed. With the motor running, add the butter and the Cognac through the feed tube and process just until well incorporated. Pack the pate into a 2 1/2- to 3-cup crock and refrigerate several hours or overnight. Makes about 16 servings. Per serving: 185 calories, 67 percent calories from fat, 14 grams total fat, 8 grams saturated fat, 226 milligrams cholesterol, 3 grams carbohydrates, .5 gram total fiber, 3 grams total sugars, 3 grams net carbs, 10 grams protein, 41 milligrams sodium.
