Fathered by double-James Beard Award winner (and passionate crustacean lover) Paul Bartolotta, this upscale eatery specializes in seafood plucked from the Mediterranean and flown straight to Vegas, with 40 to 50 different (live) species on hand at any given moment (there’s even a marine biologist on staff). To experience the best of all seafood worlds, try the four-course tasting menu, served Italian family style.
The restaurant, by the way, is gorgeous and ultra-Italian, with large terra cotta urns surrounding the entrance, three-story windows overlooking the Wynn’s shimmering lagoon and a palatial winding staircase that leads to the lower dining area. Enjoy a long, relaxed meal in an outdoor cabana, and you might even get a chance to schmooze with the master chef himself.
