For a citrusy vinaigrette, we used a grapefruit soda and mixed it with a touch of mustard, grapefruit juice and seasonings. It was perfect, drizzled over a shrimp and grapefruit salad.
Shrimp, avocado and grapefruit salad with grapefruit soda dressing
Prep: 20 minutes
Marinate: 1 hour
Cook: 3 minutes
Servings: 4 main-course servings
Dressing:
2 tablespoons grapefruit juice
1/4 cup grapefruit soda
1 clove garlic, minced
1/4 teaspoon Dijon mustard
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
1/2 cup canola oil
Salad:
1 pound medium shrimp, peeled, deveined
1 package (8 oz) mixed spring greens
2 grapefruit, cut into segments
