Cut, (702) 789-4141 and (702) 607-6300; www.palazzolasvegas.com/cut.aspx. Open 5:30 to 10 p.m. Sunday through Thursday and 5:30 to 11 p.m. Friday and Saturday. Bar and lounge open till 1 a.m. Entrees, $31 to $85.

Prix fixe sushi menus at Bar Charlie, eight courses $175 and 14 courses $250 per person (plus wine, tax and tip). Kitchen loft table, 10-course tasting menu beginning at $350 per person (plus wine, tax and tip).
