Restaurant standouts at the Palazzo, plus one that's off the Las Vegas Strip

Here are the notable restaurants in the new Palazzo Resort Hotel Casino (3325 Las Vegas Blvd. S., Las Vegas), plus one worthy maverick off the Strip:

Carnevino, (702) 789-4141; www.carnevino.com. Open 5:30 to 11 p.m. nightly; bar opens at 5 p.m. Lunch to start soon. Entrees, $28 to $75.

Cut, (702) 789-4141 and (702) 607-6300; www.palazzolasvegas.com/cut.aspx. Open 5:30 to 10 p.m. Sunday through Thursday and 5:30 to 11 p.m. Friday and Saturday. Bar and lounge open till 1 a.m. Entrees, $31 to $85.

Restaurant Charlie, (702) 607-6336; www.palazzolasvegas.com/dining.aspx#Rcharlie. Open 5 to 10 p.m. Sunday through Thursday; 5 to 11 p.m. Friday and Saturday. Entrees, $38 to $75. Prix fixe sushi menus at Bar Charlie, eight courses $175 and 14 courses $250 per person (plus wine, tax and tip). Kitchen loft table, 10-course tasting menu beginning at $350 per person (plus wine, tax and tip).

Louis's Las Vegas, 6599 Las Vegas Blvd. S., Las Vegas; (702) 202-2400; www.louislasvegas. Open 5:30 to 10 p.m. Sunday through Thursday; 5:30 to 11 p.m. Friday and Saturday; 11:30 a.m. to 3 p.m. Saturday and Sunday for brunch. Entrees, $29 to $45.
