An Umami Soba workshop will take place Sunday at a private residence in Santa Barbara from 11 a.m. to 2 p.m. Sonoko Sakai from the cultural and educational project Common Grains will teach guests about bonito flakes, konbu seaweed, dried shitake mushrooms and koji-fermented seasonings such as soy, sake and mirin. Sakai will also demonstrate how to make essential broths and dipping sauces. During the second half of the workshop, attendees will learn how to make soba noodles from scratch using freshly milled buckwheat flour from Japan and authentic tools.
