3. Critic's Choice: Three divine chocolate creations

Remember when you couldn't go to a restaurant without coming across yet another flourless chocolate cake? And when that trend finally passed, the chocolate fashion became precious, over-elaborate tastings of this and that. I'm glad that's finally passé. When something is good, you want more than one bite, no?

  11. How to roast a chicken (and not the roaster)

Ooooh, the holiday season does bring out the cranky in some people, doesn’t it? When our S. Irene Virbila wrote a blog post the other day about her new favorite roast chicken – from British chef Simon Hopkinson’s “Roast Chicken and Other Stories” – some of the online commentary got a little hot. The issue is one of timing – Hopkinson (and Virbila) call for roasting the chicken for 40 to 60 minutes with the oven first on high heat at 475 degrees, finishing at 375 degrees.

  13. Homemade holiday gift idea: Chocolate bouchons recipe

The perfect gift for the chocolate lover: bouchons. Thomas Keller's recipe for bouchons is built with a cup of cocoa powder and 6 ounces of chopped chocolate -- and twice that amount of melted butter. The bouchons turn out of their tins like oversize thimbles, with a texture that falls somewhere between dense cake and denser brownie, the structure of the crumb interrupted by tiny pockets of melted chocolate.

  17. Southern California Close-Ups: The gentle and genteel Santa Barbara

If all of California had been created by a romance novelist, it would probably look like Santa Barbara -- whitewashed walls, red-tile roofs, gentle slopes, lapping waves, swaying fronds, stately churches and private estates suitable for Oprah, Rob Lowe and the crowned heads of Europe.

  23. Critic's Choice: Stock up the picnic basket

This weather practically demands a picnic. But having the time to make the entire spread is often more dream than reality. That's where some of L.A.'s top restaurants step in with takeout picnics to order. OK, you didn't make everything yourself. Get over it. What's important is being outdoors and spending time with friends and family. Just don't forget the napkins — and real silverware. And especially don't forget the corkscrew.
