  1. UCLA students dig into the physics of food

The three undergrads looked warily at the pulverized apples in their bowl.
The three undergrads looked warily at the pulverized apples in their bowl. The would-be pastry chefs had planned to drop dollops of the mixture into a chemical bath, creating fruity spheres with a filmy skin and an oozing interior. Their early...

  5. The Royce turns steakhouse; Rao's hits Hollywood

After finally updating the decor a couple of years ago at the <a href="http://pasadena.langhamhotels.com/">Langham Huntington Hotel</a>'s fine-dining restaurant and bringing in Patina alum David F&eacute;au (after the departure of big name chef Michael Voltaggio), the Royce is doing a 180.

  7. Michael Voltaggio: L.A.'s "it" chef talks cuisine and culture

Los Angeles is a mix of culture and trends, but it is culture that truly inspires the food scene here. We find it at the taquerias, the ramen shops, the place with those delicious soup dumplings. We find it in the strip mall Thai restaurants that we stumble into late at night and yet crave again at lunch time, or the joints serving sushi, falafels, ceviche, and chicken and waffles. What these restaurants all have in common is good food, thoughtfully prepared in a comfortable environment.

  9. Critic's Choice: Sandwiches that are a slice above

Who wants to eat lunch inside on these perfect early summer days? A salad is too messy to eat from your lap unless you carry a cleaning kit with you. But a sandwich? That's why it was invented. You could pack your own peanut butter and jelly, but if you want a lesson in the art of sandwich making, try one at any of these three places. I could list a good many more worthy sandwiches &mdash; the tarragon chicken salad at Joan's on Third, the egg salad at Clementine, the duck confit <em>b&aacute;hn </em><em>mi</em> at Josie Next Door and the simple, perfect <em>jambon beurre </em>at Cookshop in Echo Park. But let's start with these three.

  11. Gindo's hot sauce finds foodie fans in L.A.

The cold fried chicken sandwich at Michael Voltaggio's ink.sack is one of the restaurant's bestsellers. The meat is cooked <em>sous-vide</em> with <em>piment d'espelette</em> and then breaded in corn flakes and fried. It's topped with crisp lettuce, pickles and tangy housemade ranch cheese and drizzled with a small-batch year-old hot sauce called Gindo's Spice of Life.

  17. A sparkling New Year's Eve

Alex Day is standing behind the custom bar at the headquarters of Proprietors, the drinks consulting company he and his partner David Kaplan recently set up in downtown Los Angeles &mdash; an office cum cocktail lab that they've dubbed Chapter &amp; Verse. "Champagne is always a good idea," Day says as he carefully pours sparkling wine along the spiraled handle of a bar spoon that leads into a flute partly filled with Armagnac, Royal Combier and a couple of dashes each of Angostura and Peychaud's bitters. "Energy, excitement, playfulness, celebration, these are things that Champagne taps into."

  19. The turkey sandwich reinvented

To call a turkey sandwich the stuff of memories sounds far-fetched (few have waxed Proustian about a turkey club), but that's what it is to Peruvian chef Ricardo Zarate. The chef behind Los Angeles' Mo-Chica and Picca came to know and love the turkey sandwich not in his native Lima but while working at the Millennium hotel in London early on in his culinary career. The object of his craving: roasted turkey with fried sweet potatoes and jalapeno-cilantro aioli between two slices of buttery brioche.
