1. Sly, sensual and sophisticated

The change of ownership notice in the window looked ominous. Oh no, I thought, we're not going to lose Jar, are we? Not in a year when Nouveau Cafe Blanc, 5 Dudley and Chianti all shut their doors. Not this reliably excellent and very civilized Los Angeles chophouse. There goes that luscious pot roast, those baby turnips roasted with their greens on, the world's best fries and that demure banana cream pie! Say it's not so.

  5. Advanced sushi

It was a life-changing moment: The sushi chef presented my friend and me with wine glasses filled partway with sake; tiny live crabs crawled up the sides. Back into the kitchen the glasses went, and soon the crabs returned as very crisp, tiny, perfectly crab-shaped snacks. Then came barely cooked Japanese lobster that had been chopped, drizzled with shoyu and returned to its shell; a small pile of tiny sweet-tasting shrimp; sashimi and sushi cut from pristine Spanish mackerel, squid and halibut fin, each carefully dressed with combinations of pickled radish, scallions, shiso leaf, yuzu, pickled radish, shoyu and sea salt.

  7. Wrapped in an all-French weekend

Luray, Va. — Outside the picture window, the setting sun sends long shadows over violet, lavender and indigo peaks. Stars in the darkening sky seem to echo the tiny sparkles appearing in the valley far below. Edith Piaf trills in the background, and five new friends and I, speaking only French, make our way through a five-course meal in typical French style: with lots of talk and even more wine.

  11. Chamomile, Komatsuna and Co.

So how do you cook red amaranth? We love its leaves, with their spinach/pot-herb flavor, in clear broth with shreds of chicken or pork and rings of scallions. The red glow in the leaves seeps into the broth, turning it deep rose. I pick the leaves, also...
