Peru: High sodium

The salt works of Maras, in the Sacred Valley outside Cuzco, include hundreds of evaporation ponds, which local families have used for centuries to gather pink salt for sale. The site is about 11,000 feet above sea level. Some strong-lunged travelers arrive by bike, crossing miles on dirt roads alongside rugged barley fields. The rest of us take taxis.
