Spikey-haired celebrity chef Guy Fieri has expanded his culinary reach in Las Vegas with a new restaurant that’s Mexican themed -- tacos, enchiladas, burritos -- but tastes a whole lot different.

“It’s stuff you’ll recognize by name on the menu [but] it’s stuff you’ll not recognize by flavor when you taste it,” Fieri said.

El Burro Borracho -- translated as “The Drunken Donkey” -- opened at the beginning of April inside the Rio All-Suite Hotel & Casino. (There’s another one at Harrah’s Laughlin in Laughlin, Nev.)

The Food Network star’s newest eatery overlooks the Rio’s pool. You’ll find his hallmark flavors applied to South of the Border favorites, like a wide selection of street tacos.

The al pastor is a blend of marinated pork shoulder, grilled pineapple serrano salsa, avocado crema, pickled red onion, lime and cilantro. Three tacos, served on grilled corn tortillas, with beans and rice cost $17.

The El Jefe Hamburguesas take burgers to new heights. The El Hombre ($18 with fries) is a hefty beef patty complimented by toppings that include smashed beef machaca, melted queso casero, black beans, salsa molcajete and shaved jalapeño.

Those who want a twist on the usual French fries can add crispy yucca fries ($11) with chile-lime dust and chipotle-ranch dipping sauce.

“It’s creative [food],” Fieri explained. “It’s not authentic Mexican like you’d find in Mexico. It’s not common Mexican like you’d generally find a lot of times in the United States.”

True to its name, El Burro Borracho features plenty of tequila-based cocktails, including a signature fiery concoction called the Caliente Margarita ($15).

“I’m not a big fan of margaritas typically because the sweet and sour syrup is so overpowering,” Fieri said. “So we make our own simple syrup. We muddle a little bit of jalapeño, a little bit of cilantro, fresh lime juice, really good tequila and great ice. Believe it or not, ice doesn’t get enough play.”

The restaurant is open daily from 4 to 10 p.m.

Guy Fieri’s Kitchen & Bar at the Linq opened a few years ago and serves burgers, wings, tacos and lots of craft beers.
