Secreto

Berkshire Pork Secreto (can be done with Pork Tenderloin or Pork Belly for the home cook)

Brine:

2 qt Water

1 cup salt

1 cup sugar

Allow the pork to brine for 12 hours.

Red Bell Peppers:

3 red bell peppers, roasted peeled, julienne

2 cups blanched green beans

1 Tbl Margoram

1 Tbl Basil

1/4 cup red wine vinager

3 Tbl extra virgin olive oil

Salt to taste

Toss all ingredients together and allow marinate in the refrigerator.

Pickled Water Melon Rinds:

Quart of watermelon rinds, cut approximately 1 by 2 inch squares

1 qrt water

1 qrt white balsamic vin (can sub white wine vin)

2 Tbl pickling spice

2 cups sugar

2 cups salt

Bring to boil and pour over watermelon rind

Sear the pork until medium well and enjoy!
