Bobette Moore and Gary Caulfield make the region's best soups and have been ladling liquid goodness down New Haven County gullets for an amazing 23 years. Among their customers' favorite soups are Shrimp Bianco, Lobster Bisque, Connecticut Chowder and White Bean Chicken Chili. Their more innovative offerings include Drunk Tomato Tortellini, with a vodka sauce, and a Clams Casino soup that "tastes just like the appetizer," according to Caulfield. There are over 100 recipes in Moore's soup repertoire and the shop offers 10 varieties daily. Vegetarian entries include Lentil Soup and Mushroom Barley; cold soups such as Gazpacho and Vichyssoise and dessert soups like Blueberry Badabing, a cold soup topped with a Bisquik biscuit and whipped cream. Not all of the soups are hits though. An early try was for Caesar Salad Soup - yes, it had hot lettuce in it. But Moore, who creates all the recipes, wins far more than she loses. The Lasagna Soup was conceived when she was almost finished eating a piece of lasagna, she looked down at the mess of noodle bits, sauce and ricotta left at the bottom and realized, "It's always the best part." A soup was born.
