Irvine restaurant wine manager named

As the wine collection at Irvine restaurant Bistango grows beyond 500 labels, the restaurant manager, credentialed sommelier and Costa Mesa resident Bill Blank is stepping in to oversee the restaurant’s wine program, according to a news release.

“I’m excited to accept this promotion, which grants me more freedom to develop a wine program that offers something for everyone — from novices to knowledgeable and experienced wine aficionados,” Blank said in a prepared statement.

Offerings already include rare bottles such as “Three Sticks,” a pinot noir from Silver Eagle Vineyard, which only allocated 30 cases for Southern California, the release said.

Blank said he most enjoys “hidden gems” from other countries in the collection, as well as wines produced by family operations.
