But 20 years and a culinary revolution later, who’s laughing now? Meet the celebrated chef at Spago on Dec. 11 as the iconic eatery celebrates its 20th anniversary in Sin City. And from Dec. 10 through 14, sample favorites from the original 1992 menu: smoked salmon pizza with dill crème fraîche, chives and caviar; weinerschnitzel with warm fingerling potato salad; and kaiserschmarrn with strawberry sauce.
