Blending Up Persimmons to Put Into Candy

“This delicious candy has been made for many years by my sister, Jennie J. Nelson, as a special treat for our family,” Marjory B. Carter writes. “She puts the persimmons in a blender, unpeeled, and chops them up.”

PERSIMMON CANDY

2 cups sugar

1 cup evaporated milk

1 tablespoon butter or margarine

1/2 cup persimmon pulp, about 2 to 3 persimmons

1 teaspoon vanilla

1 cup chopped pecans or walnuts

Mix sugar, evaporated milk and butter in saucepan. Cook to soft ball stage. Add persimmon pulp and cook again to soft ball stage. Add vanilla. Beat until cooled. Add nuts.

Pour into a greased small pan (about 7 inches) and cool, then cut into squares. Or shape into a roll without nuts and roll in nuts. Slice roll when cool. Makes about 8 servings.
