How To Roast Garlic

When garlic is roasted until it’s buttery soft, it becomes sweet, delicate and refined tasting. Squeeze each clove to extract the soft flesh from the skin and spread it on bread sprinkled with salt and fresh coarsely cracked pepper. Or add it to sauces, soups, sandwich spreads and salad dressings for wonderful flavor.

Most recipes for roasting garlic use olive oil, but here’s a simple, nonfat preparation: Wrap each firm, plump garlic head in foil, twisting the foil closed at the top. Place the packets on a baking sheet. Roast in a 400-degree oven for one hour. If you place the heads in a plastic bag, you can keep this roasted garlic for a week in the refrigerator.
