Shucking oysters takes a little practice, and there are a couple of approaches to try, but soon enough you’ll find your rhythm. Here’s a step-by-step approach.

Step 2

Pierce the gap at the hinge in the back of the oyster with a knife.   (Anne Cusack / Los Angeles Times)

Step 3

Slide the knife into the gap and give it a twist to pop the hinge.  (Anne Cusack / Los Angeles Times)

Step 4

Run the blade along the top shell to severing it from the oyster.  (Anne Cusack / Los Angeles Times)

Step 5

Work carefully here, because you don’t want to spill any of the oyster liquor.  (Anne Cusack / Los Angeles Times)

Step 6

Hold the cup side and cut underneath the oyster to free it completely.  (Anne Cusack / Los Angeles Times)
