Prime rib dinner built around three wines

For her dinner party, S. Irene Virbila served a classic rib roast with a punchy horseradish cream, sides of mashed potatoes with celery root and green beans with tarragon. Also: kabocha squash soup and persimmon pudding cake.

You’ve been saving bottles of wine for a special occasion. A special occasion that never seems to come. So devise one of your own. The Times’ S. Irene Virbila chose three wines and built a dinner around them. The main course, meant to complement the wines: classic prime rib.

The prime rib was ordered from McCall’s Meat & Fish Co. in Los Feliz. Every half hour or so during roasting, the meat was slicked down with melted butter infused with garlic and thyme. After cooking, it was left to stand for an hour before being served.   (Ricardo DeAratanha / Los Angeles Times)
