Parents of Buena Park School District students can thank Lisa Saldivar for making sure their children get a healthy lunch each day. The school’s child nutrition director has revamped breakfast and lunch menus with success: She recently earned a certificate of recognition from the California Department of Education. Previously, the dietitian said, menus were based on quantity rather than quality. She scrutinizes menus to make sure they supply the necessary nutrients needed by growing children. “Now, we base [menus] on the nutrient value and analyze them with a computer program so that they meet [nutritional] requirements,” Saldivar said. “You can serve something that has two ounces of protein but is loaded with fat.”
