Holloway replaces Alumette in Echo Park with ‘Top Chef’s’ Brian Huskey

The Holloway is replacing Allumette in Echo Park, and the new restaurant and bar is offering those participating in the Echo Park Rising music and arts event a sneak peek this weekend. The restaurant, which formerly was helmed by Miles Thompson and closed last month, will be open today with a limited menu throughout the weekend, then officially opens its doors Sept. 1.

“Top Chef” alum Brian Huskey, who worked with Ricardo Zarate to open Mo-Chica, Picca and Paiche, will be the new chef, with a menu of reimagined diner classics including burgers and fries.

Some of the dishes include a housemade vegan burger made with vegetables, nuts, barley, sprouts and faux roasted pepper aioli, hand-cut French fries with smoky ketchup and a kale salad with pine nuts, Parmesan, raisins and roasted garlic dressing.

Keeping in line with the classic diner theme, Holloway features vinyl booths and a jukebox. There’s also a full bar with two large flat-screen TVs.

During this weekend’s Echo Park Rising festivities, Huskey will serve a small selection of drink and food specials, including vegan items. Holloway will be open Friday at 5 p.m. and Saturday and Sunday at 2 p.m.
