New York’s Carbone heads west to open its first restaurant in Las Vegas

Aria swaps out one Italian restaurant for another when Carbone opens at the resort in October. The New York City Italian-American restaurant plans to showcase its table-side service prepped by captains, old school vibe and of course dishes such as chicken scarpariello, veal Parmesan and octopus pizzaiolo in the former Sirio Ristorante space on the second-floor promenade.

The critically acclaimed Greenwich Village restaurant from Mario Carbone, Rich Torrisi and Jeff Zalaznick was a finalist for best new restaurant from the James Beard Foundation after it opened in 2013. In Las Vegas, the homage to Italian-American restaurants of the mid-20th century plans to wrap its arms around the history of Las Vegas and the Rat Pack era.

Maroon-clad captains wearing tuxedos from fashion designer Zac Posen will pull mozzarella, toss Caesar salads and cook lamb chops table side, a nod to the original restaurant. The Carbone family hand picks these servers with a eye for entertaining service. Touches such as hand-painted plates and era-specific music let diners escape to a bygone era.
The location at Aria will be larger than at the Greenwich Village restuarant, one of the toughest reservations to snag in New York.

“Food is more important to me than anything in the world, but at the end of the day, what I want to do is have a great time with the best food — and the possibilities for that in Las Vegas are endless,” chef Mario Carbone says in a press statement.

Carbone joins neighbors Jean Georges Steakhouse and Michael Mina’s Bardot Brasserie, which opened in January.
