‘Pie Queen’ Evan Kleiman offers lessons online at Craftsy

At this time of year, with all the wonderful fruit in the market, it’s hard to stop thinking about pie. And if I’m thinking about pie, I’m thinking about Evan Kleiman, the “Pie Queen” of Los Angeles. After all, the host of KCRW-FM’s “Good Food” program once spent a year cooking a pie every day.

What did she learn? Take her pie class on Craftsy and find out. You’ll get three hours of pie-making videos made by Kleiman and the chance to ask questions and have her answer them.

The videos are professionally produced and cover seven topics, including an introduction to pie, pie philosophy (it’s all about the crust) and making the perfect apple pie.

The instruction is quite detailed -- there’s more than a half-hour on making dough and then almost another half-hour on rolling it out. You’ll also get instruction on blind-baking (pre-cooking a tart crust), the use of different thickeners, and decorating.

The series costs $59, but if you sign up through Good Food, you get a 25% discount.

While you’re at it, check out some of the other classes that are offered. Craftsy’s cooking section isn’t quite as filled out as some of the other categories, but what it’s got is very promising, with top teachers explaining their specialties.
