L.A.’s top foragers pop up at Tiago

Mia Wasilevich and Pascal Baudar, Los Angeles’ first family of foraging, will be gathering and cooking for a series of pop-up dinners at Tiago this weekend in conjunction with the restaurant project This Is Not a Pop-Up.

The pair regularly comb Southern California parks and open spaces for wild ingredients they deliver to such restaurants as Ink, Alma and Melisse as “transitional gastronomy.” They also teach classes such as “urban outdoor skills.”

The weekend’s menu includes such dishes as wild sorrel bisque, white anchovies with fried mallow leaves and nettle dashi, wild spring greens, lamb shank slow-cooked in mugwort beer, and spiked black sage hot chocolate.
