Where to buy sausage ingredients in Los Angeles and Orange County

Lamb shoulder, veal shoulder and pork butt can be purchased through most butcher shops and meat counters at well-stocked supermarkets; call ahead to ensure availability and to order ahead if necessary.

Pork back fat (fatback) and hog and sheep casings can be a bit more difficult to find; not all butchers carry them. Contact your local butcher or market meat counter for availability and ordering information, or contact one of the following sources.

Los Angeles County
