Dear Culinary SOS: My son and I enjoyed a delightful take on lasagna at the Westwood Palomino in early December. We requested a recipe. The dish was: deconstructed lasagna and contained a lamb mixture, cheese and mafalda pasta. The young lady would not divulge the recipe. The great blending of flavors lingers even now. Though Southern California is full of people from the Zacatecas state of Mexico, there are hardly any real Zacatecan restaurants in the area, complained Gustavo Arellano, noted OC Weekly columnist and author of the book "Ask a Mexican!" And they certainly don't serve anything like the food made by his mom, Maria de la Luz Arellano, and his aunt Maria Fernandez. Especially their wedding asado, a long-simmered stew of pork shoulder and chiles. After reading his brief description of the dish, we had to get the recipe. Well, being great home cooks, they didn't really have one. But we begged and pleaded and they eventually came through. It's not fast food, not by any means, but this dish has the deep, profound flavors that can come only with long cooking and mother love.

Creme de la custard

The custard is deep and luxurious, ivory colored and liberally studded with bits of filling -- pale leeks, tawny mushrooms or bright green spinach. Maybe a curling ribbon of ham. The top is a mottled mixture of gold and brown. The crust is crisp and a little flaky, just sturdy enough to contain it all. You cut it with a fork and the custard quivers, seemingly on the verge of returning to cream. The crust shatters against the plate.

On Saturday, amid the cacophony of firecrackers and other pyro-noise, most of China will be up all night to welcome in the Year of the Tiger. Here in the north, that will mean televisions blaring, watermelon seeds cracking, mah-jongg tiles clacking and, most important, people wrapping and eating dumplings. Northern Chinese eat dumplings on New Year's the way Americans eat turkey on Thanksgiving (southerners have a whole different set of New Year eating traditions, relying more on sticky rice things).
