1999 Chappellet Signature Cabernet Sauvignon

Cabernet is not meant for sipping on its own; it needs food, and this elegant example is no exception. Made from grapes from Chappellet’s Pritchard Hill vineyard, it’s dense and chewy, ripe and yet elegant, with a classic Cabernet nose of berry, cedar and spice and a discreet hint of new oak. Though old-style California Cabs can show a lot of tannin, and this one certainly has its share, it will work beautifully with a nice steak or an earthy roast. Lay down a few bottles to mature and reap your reward in added nuances five years down the line.
