A shift in popularity from red to white wine may be helping to improve air quality in the San Joaquin Valley, wine industry experts say. The Wine Institute, a trade group for California wineries, reports that the changing trend in drinking habits, as well as fermentation changes, have reduced ethanol emissions to half their 1977 levels. Less ethanol evaporates during the fermentation of white wine than red.
