Dish Puts Fun Into Fitness : Savory Beef Kebabs Are Low in Calories

If so, you will be happy to know that Savory Beef Kebabs, a flavorful main dish, contains only 292 calories per serving. Serve over hot cooked rice or, to add extra fiber, use brown rice.

SAVORY BEEF KEBABS

1 pound beef top round steak, cut 1 1/2-inches thick

1 (12-ounce) can vegetable cocktail juice

2 tablespoons red wine vinegar

4 teaspoons honey

1 teaspoon grated orange peel

1/4 teaspoon garlic powder

1/4 teaspoon dry mustard

1/8 teaspoon black pepper

1 medium summer squash, cut in 1 1/2-inch slices

1 large onion, cut in 1 1/2-inch pieces

1 large green pepper, cut in 1 1/2-inch pieces

Hot cooked rice

Trim excess fat from meat. Cut into 1 1/2-inch cubes.

Combine vegetable cocktail juice, vinegar, honey, orange peel, garlic powder, mustard and pepper in saucepan. Bring to boil over medium heat, stirring occasionally. Reduce heat and simmer, uncovered, 5 minutes or until mixture thickens slightly. Cool.

Arrange meat in shallow dish and pour marinade over. Refrigerate, covered, at least 3 hours, turning once.

Meanwhile, cook yellow squash in boiling water in 2-quart saucepan 5 minutes or until tender-crisp. Drain. Thread meat, squash, onions, and green peppers alternately onto metal skewers. Reserve marinade. Broil kebabs 10 minutes for rare or to desired doneness, turning and basting occasionally with marinade. Heat remaining marinade. Serve kebabs with hot cooked rice and remaining marinade. Makes 4 servings.
