Pepper Steak Provides the Pep to Dinner Menu

“I experimented with different things and came out with this recipe,” Melanie Tulla writes. “You need not add anything except a platter of hot rice and dessert (for dinner).” PEPPER STEAK
1/4 cup oil
1/2 clove garlic, crushed
1 teaspoon ground ginger root
2 pounds flank steak, cut in very thin diagonal strips
2 green peppers, seeded and cut in julienne strips
1/4 cup chopped onion
1/4 cup soy sauce
1 teaspoon sugar
Salt
Hot steamed rice
Heat oil in wok or large deep skillet over medium-high heat. Add garlic and ginger and saute until golden. Add steak, increase heat to high and cook 5 minutes, stirring constantly. Remove meat and set aside.
Add green peppers and onion to hot skillet. Stir-fry until tender-crisp. Stir in soy sauce, sugar and salt to taste. Return meat to skillet and cook just until heated through, about 2 minutes. Serve with hot steamed rice. Makes 6 to 8 servings.
