Quick, Easy Recipe for Two : Ginger Marinade Adds Spice to a Ham Entree

Cooks who work outside the home will appreciate this recipe for Gingered Ham Slice for Two. The center-cut ham slice is combined with a marinade the night before or in the morning, then baked just 30 minutes after arriving home in the evening. That’s just enough time to cook some rice and prepare a green vegetable or salad. Rolls and a beverage round out the meal.

GINGERED HAM SLICE FOR TWO

1 fully cooked center-cut ham slice, 1 inch thick

1/2 cup ginger ale

1/2 cup orange juice

1/4 cup brown sugar, packed

1 tablespoon oil

1 1/2 teaspoons wine vinegar

1 teaspoon dry mustard

1/4 teaspoon ground ginger

1/8 teaspoon ground cloves

Score fat edge of ham and place in shallow baking dish. Combine ginger ale, orange juice, brown sugar, oil, vinegar, mustard, ginger and cloves.

Pour marinade over ham, then refrigerate overnight or let stand at room temperature 2 hours, spooning marinade over ham several times. Bake at 350 degrees about 30 minutes, brushing frequently with marinade. To serve, spoon remaining marinade over ham. Makes 2 servings.
