Peach Cobbler

“A friend made this dessert for my family 12 years ago when I came home from the hospital after having a baby,” Marilyn Purbaugh writes. “I got the recipe from her and baked it over and over, altering and adding to the ingredients until I established this recipe. I only use fresh peaches, so it is my summer recipe. In the winter I substitute chopped apples. It is quick to make and always a hit with company.”

PEACH COBBLER

3 cups chopped ripe peaches, unpeeled

1/4 teaspoon ground cinnamon

1 cup sugar

1/2 cup butter

4 ounces cream cheese

1 teaspoon vanilla

1 egg

1 cup buttermilk baking mix

Place peaches in bottom of 9-inch square baking dish. Sprinkle cinnamon and 1/2 cup sugar over peaches.

Melt butter slightly and mix in cream cheese, vanilla and remaining 1/2 cup sugar. Beat in egg, then buttermilk baking mix.

Scoop mixture on top of peaches and spread evenly. Bake at 350 degrees about 40 minutes or until golden. Serve warm with ice cream, if desired. Makes 9 servings.
