A Spicy Yogurt Sauce for Beef : Pungent Flavors Complement Tastes From Wine Marinade

After soaking several hours or overnight in a garlicky red wine marinade, this beef top round steak is grilled just until rare. Slice thinly and serve with Spicy Yogurt Sauce, a blend of plain low-fat yogurt and pungent cumin, cilantro and fresh lime flavors.

Round out the meal with grilled vegetables, such as corn on the cob, squash or peppers.

BEEF GRILL WITH SPICY YOGURT SAUCE

3/4 cup dry red wine

1 clove garlic, minced

2 teaspoons Worcestershire sauce

Salt, pepper

1 (2-pound) beef top round steak, cut 1 1/2 inches thick

Spicy Yogurt Sauce

Combine wine, garlic, Worcestershire and season to taste with salt and pepper. Place round steak in glass dish and pour wine mixture over. Refrigerate several hours or overnight, turning meat occasionally.

Grill 4 inches from medium-hot coals 8 to 10 minutes per side for rare or until desired doneness. Place steak on cutting board and slice thinly. Serve with Spicy Yogurt Sauce. Makes 8 servings.

Spicy Yogurt Sauce

1 cup plain low-fat yogurt

1/2 teaspoon ground cumin

1/4 teaspoon salt

1/4 teaspoon garlic powder

1 tablespoon chopped cilantro

1 tablespoon lime juice

Combine yogurt, cumin, salt, garlic powder, cilantro and lime juice in bowl. Let stand 20 minutes before serving.
